Six Loaf Whole Wheat Bread Recipe

 

Mix in a glass bowl with a fork:

 

1-1/4 cups very-warm Water

1/3 cup Yeast

1/3 cup Sugar

 

Make sure that all the sugar and yeast are dissolved. Set aside.

 

Pour into the Bosch mixer on #1 speed:

 

7-1/4 cups Hot Water (not boiling)

10 cups Whole White Wheat Flour

 

Mix for about 1 minute, turn off, and scrape down the sides with a spatula.

 

Add into the mixer on #1 speed:

 

1 cup Brown Sugar

3 TBS Salt

1/2 cup Gluten Four

1 cup Whole White Wheat Flour

1 cup Oil

The Yeast Solution (after it has risen for 10 minutes or doubled in size).

 

Add into mixture on #1 speed:

 

10 more cups Whole White Wheat Flour

 

Knead for 10 minutes on #1 speed or 5 minutes on #3 speed:

 

Spray oil in 6 medium sized bread pans.

Spray oil on your hands (or keeping them wet with water also works).

Divide the dough up evenly into the 6 pans.

Shape the loaves into oblongs with smooth tops, tucking the lower edges up into the bottom centers and allowing the top to balloon out.

Put into pans

Allow to rise for about 15 minutes.

 

Cook for 45 minutes in oven pre-heated to 375 degrees Fahrenheit.

 

If you can't cook them all at once, put a damp towel over the shortest loaves and leave them in the refrigerator while the first three loaves cook.
